October 21st is "International Day of the Nacho".
!943, some wives of American servicemen were on a shopping trip in Piedras Negras, Coahuila, Mexico, just over the border from Eagle Pass, Texas. They stopped in a local restaurant owned by Ignacio "Nacho" Anaya. Ignacio had been getting ready to close, and had little food left, so he came up with an idea to use what he had left. tortillas and cheese. He cut the tortillas into triangles and fried them and added the cheese, calling the dish "Nachos Especiales", or "Nacho's Specialty". The dish spread through Texas, and later to the rest of America.
So here's to Ignacio Anaya, a true hero of Tex-Mex cooking!
