Healthy Dinner Option

I've been working on eating better and losing weight. Here is a dinner option I started making. It's spaghetti squash in a tomato cream.
To cook the squash just wash and leave whole. Preheat oven to 375 degrees. Place foil on a sheet tray and place the whole squash on tray. Important! Stab holes into the squash to allow steam to escape. Roast for about one hr. Once its done carefully cut in half lengthwise and let cool.
While the squash is cooling make the sauce. The basic ingredients needed are Garlic, Tomato paste, Cream Sherry, & Plan Greek Yogurt. I also like to add vegetables to mine. I like adding 1 large Onions, 1 large Pablano Pepper and 1lbs of Mushrooms. You can add any type of veggie you like. I also like to add some spice to mine in the form of chilpotle peppers in adobo sauce. Both vegetables and spice are completely optional to your specific tastes
First add a little bit of oil and saute all the vegetables (sliced) in a pot. Once the veggies are cooked and 9 oz tomato paste and spice (I like to mince two chilpotle peppers and and a tad of the adobo sauce.) I also like to add some italian dry herbs at this point. Basil, thyme, oregano. That sort of thing. (I also want to try and add some nutmeg but haven't tried that yet. Once I do I'll update this.) Cook together for around five minutes then add the cream sherry. ***BE CAREFUL OF OPEN FIRE AND THE SHERRY! COULD FLAME UP!*** Use around 2 to 3 cups of the sherry and let reduce for a few minutes stirring and scraping bottom to avoid scorching. Next reduce heat to almost off and add the yogurt. Add a little at a time and taste. Yogurt has a sour taste and can over power the dish quickly. I tend to use around 6 to 10 ozs. Once it's all mixed I like to add a cup and a half of parmesan cheese. That's the sauce.
Return to the squash and remove the seeds. (I like to take the seeds and roast them with some cajon spice and spray with some butter favored cooking spray. They make a nice snack) Be careful for the squash is still a tad warm, which is good. Scoop the squash out of the shell and add to the sauce. When stirring in the sauce the squash will brake up into strands the mimic spaghetti. Once the squash is all added and mixed in turn heat off. it's done!!
And that's it. You can add any type of meat you'd like. Chicken, pork, beef, shrimp. I think it would all work really well. I especially like the idea of Blackened Shrimp or chicken. I'd blacken the chicken and then when cooked slice and mix right into the finished dish.

Alright, cool. I really have no time for the next couple weeks because we're short staffed at the restaurant. As soon as we hire someone and I get my saturdays back we will defiantly cook this up. I'm thinking end of march early april. How's that sound. Also send me some foods ya like and I can develop a meal around that.
