Writing Sci-Fi is Hard...

I am more noble than you? And you are more noble than me?
...especially with a post-apocalyptic setting. Seems like when I wanna write something where this happens or that happens or I want the character to have this or that, it's impossible because, supposedly, things are limited: weapons, technology, food, etc.
I stupidly looked at this at what almost every other writer is writing: zombie apocalypse setting; where everyone who hasn't been infected by whatever caused the dead to limp around and attempt to eat your brains are boarded up in someone else's house or a large place of business and sneaking around into other houses or stores to find what supplies are left behind.
I'm not doing zombies though, I'm doing aliens that are attempting to take over Earth in a different way other than blast everyone to kingdom come.
It's disheartening and trying to think of people/places/alien tech gives me more migraines than the ones I have during my time of the month (and stuff like this makes me madder...) but I know I got a good thing going here so I'm not quitting. Just that I know this story is going to be a lot more work because I don't wanna be like "this happens because that happened, so there!" with everything and leave big-ass holes open everywhere in the story.
did suggest a sci-fi RPG series that I could use as a reference for writing a sci-fi story but sadly I can't remember it. Forgive me, Forrester, if you're reading and if you could remind me again. And if anyone else, sci-fi readers, writers, fans, whoever's more of a genius than I am when it comes to science-fiction wanna throw some suggestions my way, it'd be very much appreciated.

1) Food and weapons are Currency. If you have food, it can be used to bargain for weapons, protection, or a way to keep people in line via rations. Weapons could be used as a form of deterrence.
2) Many people will band together under different Ideologies:
a) Government where people work with what occupation they fit in to rebuild society.
b) Outlaws with a hierarchy of survival of the fittest. The most influential and strongest person bosses people around.
c) Roamers who constantly move to avoid the undead, thus often have a community structure.
d) Military who fortify their position to protect the civilians who seek protection. Area often under strict surveillance due to Martial Law.
3) There will be conflicts for food and medicine, varying from simple trade arguments to all out war.
4)There will be those bent on sabotage as well. There will always be someone who loses their sanity. There will always be a parasite that mooches off of everyone's efforts.
That's my take on such a zombie apocalypse. Weapons are not as limited as anyone would think. You don't need straight out guns to fight a zombie apocalypse.
Technology is not at all limited. Powerplants could still be functional at the beginning but Hydroplants are probably anyone's best bet. Food are plentiful if you are quick at the draw and manage to get enough rations to survive until produce grows from the ground. Though in the ensuing chaos of such an apocalypse, being quick on the draw doesn't mean you will survive.
How about a twist where instead of blowing stuff to kingdom come, they do a domination kind of thing. They target major cities to establish their power, topple enemy government and instill martial law to oppress the citizens?
I have the plot formed...sorta but what's really stopping me is the things that will be involved in the future chapters, such as weaponry and food. For example, I thought of how people grow food with military assistance since the soil will be tainted with radioactivity but, even after surviving for several years, there still won't be the normalcy of waking up and eating cereal or pancakes in the morning.
