Pancake Cookies:
*Pancake mix
*Milk
*Sugar
Mix up the pancake mix with some milk until it's "soupy", then add some sugar. How much sugar is up to you. Heat up a frying pan, add a little butter if you want, just to keep things from sticking to the pan. Use a table spoon to dump a cookie sized portion of the mix on the pan, and cook until it's not liquid any more, flipping over as needed. If you have a large pan you can do several at once. Repeat until you run out of mix.
