well, I'm guessing you're signing up with google+/gmail? it should sync to whatever your google+ name is. if not and its another email you should be able to change it...

Mmm, how do I sign in without using Google +? Basically I just want to name the channel whatever I want without using my email names

well I'm trying to find around google+ but I honestly am not finding anything helpful.
you may just have to use google+ and sync the names so your set google+ name will be your channel name.
