Adam actually matured a lot from spending time with Belle and all his problems are easily explained. And since he was never malicious and really did want to love, his problems were fixable. Everything bad in the movie was actually the fault of the evil fairy who cursed him at the start.

Of course if you look at the Disney princesses under the same light you see they'd all be just as terrible of girlfriends.
