I also use them to add creaminess to pasta sauce.
My mum cuts it up and mixes it into salads.
My dad likes cutting them in half and putting a bit of dressing in the dent, then eating it with a spoon.
My step mum blends them into sauces and dressings.

Peel them, cut them in half, remove the stone and pour a bit of lemon juice over them, so they won't get brown. Then freeze them in a bag for later use.

Per Alton Brown, the rich fats and quality of an avocado will let them stand in directly in place of shortening, butter, even eggs in many recipes.

Wuff has done Avocado Smoothies as well, and when mixed with fruit, juice, etc., is sweet and delish, more like a shake than the more expected savory guacamole.

That page has dozens and dozens of ideas in the "recipes" section, including some very unusual ones like chocolate pudding, muffins, "burger" patties (with chicken), and Pesto!
Avocados can be frozen, whole or mashed. If mashing, you can put them into freezer-rated zip bags for large quantities, or spread them into ice cube trays and cover with plastic until solid, for smaller portion sizes. You'll want to acidulate them first with lemon, lime, or other acidic juice to keep them from browning.
If they're not already ripe to the eating stage, you can slow down the ripening somewhat by refrigerating them.

Jist of it is:
- Wash, peel, and 1/4 inch slices
- Acidulate the slices to preserve color
- Process at 180 degrees F to "harden" the exterior quickly to preserve the oils
- They go "bad" at 5 months (may hold longer if processed and then frozen) because, unlike fruits, they do not have the sugar content to retard spoilage, and have a high oil content that will go rancid in time (Best eaten within 3 months)
- The rehydrate quite nicely!
Another blog suggest that a coating of ground flax seed, nutritional yeast, and salt prior to dehydrating creates a very tasty snack that can be eaten "as is" when dryed
Lastly, a different blog made a paste of prepared seasoned guacamole, and spread it like a fruit leather on some parchment paper, and processed at 135 for 7 hours, flipping the paper over at 3 hours then peeling it off the back to leave just the guac at 5 hours. After allowing it to cool to room temp, process in a blender or food processor into a fine powder, to create "Instant Guacamole" that can be stored in zip bags in the freezer and re-hydrated back to "real" guac quickly!
Each quarter cup of wet mix became ~2 Tbs of dry powder. To re-hydrate, add about 2 Tbs water and kneed the bag to mix. Let rest for about 15-20 minutes to fully hydrate.
Once again, make sure your quac recipe contains lemon, lime, or other acid juice to prevent browning.

No idea on that last, but the author was pleased with the results! ANd since it only takes about 3 minutes, it might be worth a try. If it doesn't turn out, not a big loss.

1 sm Avocado, peeled and pitted
1 large handful Baby Spinach
1/2 C Vanilla Yogurt
~1 C Vanilla Almond or Soy Milk
~ 1 1/2-2 C frozen seedless Grapes (Red or White)
~ 2/3 C frozen Blue Berries
~ 1 Tbs Nutritional Yeast
Optional - 1 frozen Banana
The frozen fruits substitute for ice to give the "frozen smoothie" texture.
You can certainly add other fruits or a bit of honey to sweeten it farther, but the Soy/Almond milk and the fruit adds a nice sweetness on their own.
Yes, this is an "Interesting" greenish-blue color, which wuff chuckles a bit at.
And it does take a pretty "beefy" blender to handle the frozen fruits and spinach, and process them nice and smooth. It also makes several servings. But it has lots of nutrition and is "good for you". *grins*
