I dunno about it locking up, but each time you start the demo its supposed to be a different time of day, to showcase both Pokemon Sun's setting and Pokemon Moon's setting
About the events, not too sure. There isn't much to do after the main portion of the demo

Well, there are certain events which are triggered after a couple of days have passed (like the guy next to Pokemon Center giving you an item after 1 day, and the girl waiting for someone will introduce you to that person after 5 days, etc.)

I did, and still nothing. And even as days passed the girl kept repeating "I will meet him in 5 days", when others reported that normally she should lower the count on each passing day.

Maybe it has to do with the 3ds clock or something? Or maybe they just expected everyone to download it day 1.

Yeah, as I mentioned above, for some people it would occur if they tampered with 3DS' clock; but doing this kind of thing usually locks you out of events for 24 hours only, after which you can proceed as usual. But in this case the lockout is permanent. For other people the glitch occurs at random, sometimes when they're couple of days into the demo; it seems that the first and third day seem to be the most critical for the glitch to occur. And like the clock tampering, the glitch is permanent.

From what I looked up, it would be a case of deleting the demo and setting the DS clock back to its release date, then downloading again.

Yeah, I saw this video. However it seems changing the date is unnecessary, some people reported the fix worked even without changing the date.
