Coddling the wuffy

Nobody having birthdays or such at the office this month, so we can't use those as an excuse to have a celebration at work. Luckily, March has the St. Patrick's Day holiday! So there will be celebrations at work after all!
Vrghr decided to give the shop folks a choice of potential "Irish-themed" goodies:
1) Corned Beef and Colcannon (buttery mashed potatoes with Kale or Cabbage)
2) Cottage Pie (like a Shepherd’s Pie except using ground beef instead of lamb)
3) Irish Stew (Beef stew with Guinness) with Soda Bread
4) Dublin Coddle (layered casserole/stew dish with sausage, bacon, potatoes, onion, barley, etc.)
5) Pasties (Something akin to a savory "hot pocket" with pork, onion, potatoes etc. in individual “hand meal” pastry shells)
It looks like the Dublin Coddle is winning out, though the Corned Beef and Colcannon is a close second. Everything got at least one vote though (some folks voted for more than one choice).
So it looks like Vrghr will be Coddling his co-workers on the 17th! *grin*
For those new to the term, a Dublin Coddle is basically a casserole or stew (depending on who you ask) featuring sausages, bacon, potatoes, onions, broth, and sometimes carrots and cream. Wuffy is busy prowling through the forests of the Internet, searching out recipes and variations and checking out how different places and folks make their own special versions. Looks like this is going to be a very nice "comfort" dish when wuffy gets done with it!
Stay tuned for photos and recipes of the result! And in the mean time, don't forget to the wearin' of the green to keep from getting a pinch! *grin*

Thinking this would be another great dish for the wintry months too, curled up in the blankets with a nice wedge of soda bread to sop up the broth!
Of course, knowing CO weather, it's entirely possible it will be snowing and blustery on the day we serve this! *chuckles*

Corned Beef & Cabbage and Beer-Battered Sausages & Chips
Beer-battered sausages and chips sounds TOTALLY yummy! Yes! Ya gotta let wuffy know your tips/techniques for that one!
Sausages & chips would be just like fish & chips, just different meat
And I'll try to take pictures, lol
But the food he would make!!!
All these sound delicious! I can't wait to see the creation itself!

XD Being coddled with Coddle is one of the best ways to coddle.
Which reminds me I haven't made it in several months. :3c You're likely not going to be the only one making some on St. Patrick's Day.

Sounds delicious in any case. I experimented with soda bread for a St Patrick's dinner some years ago, and I find myself making it often, especially with a potato soup or similar.
Vrghr has made Soda Bread before too! And even for this non-baking wuff, it was quite easy to create and a delicious result! Considering how painstaking and detailed some bread recipes are, Soda Bread really should be featured early on in the "bread baking for dummies" cook book (is there such a book? Hmm....). It's a Wonderful treat, and wuff can just imagine how scrumptious it would taste with your potato soup!
But the scent of fresh bread in the house is still one of wuff's favorite aromas.
As a baker, you've definitely got this wuff's respect!
Vrghr has tried to make other baking creations from scratch, but while most ended up "passable", few came close to wuff's ideas of "perfect". It doesn't help that wuffy is cooking at over 6000 feet, but there are ways to compensate for that. It's just that all the little ingredients play together so tightly when baking, and the smallest changes can have significant results on the outcome.
You've REALLY got to understand all the dynamics going on. Wuffy has a HUGE respect for those bakers who can make changes by instinct. Balancing PH and Hydration and knowing how different fats act, how different sorts of flour affect gluten levels... so many variables! Wuff thinks most bakers must have a second degree in science, because Baking is Chemistry that tastes good! *chuckles*
