May Breakfast - what May Wuffy make?

Another Office Party is rapidly approaching! Actually, there are two party events on wuff's calendar this month; the Office Birthday Celebration, and a very good friend's "Memorial Day Hot Dog Social".
The latter is an annual event that Vrghr has been attending for many years now. Wuff developed his "real" Coney Island Hot Dog Sauce (found here: http://www.furaffinity.net/view/16070645/ ) for the first of these. It was such a huge hit, that wuff has been supplying it to each one ever since! *grins* Ahh! Such a meaty treat! A really taste of Summer Fun!
Immediately following that weekend, the shop will be doing a celebration of all the birthdays for that month. The birthday folks asked for something sweet for breakfast, and wuffy is happy to oblige.
Wuff is considering something inspired by "Pigs in a blanket": normally created with Sausages rolled up in pancakes and drizzled with maple syrup. A nice, traditional and tasty dish! And definitely sweet.
But - what if wuffy could put his own twist on this? Say, perhaps, using a nice fluffy, eggy batter? And enrobing chunks of pre-cooked breakfast sausage or meaty pre-cooked maple-glazed lardons of bacon in it? Then deep frying them until toasty and light and golden?
Wuff could serve these little breakfast poofs lightly dusted with powdered sugar, and supply several "dipping options" such as maple, strawberry, blueberry, Nutella syrups, etc., to dunk them in! That should definitely meet the 'sweet breakfast' requirement!
Wuff was considering a variation on the Pate A Choux dough, for the covering. That ought to be pretty interesting, if wuff can get it to work!
*rubs his paws together* Looks like wuffy has some experimenting to do!

Wuff did do a Brule'd French Toast, though it was nothing like that recipe. Vrghr's version was stuffed with fresh berries and cream cheese, and then a crispy sugar coating was flame-torched on the top for an exotic and sweet crunchy texture. What a great muffin, and looks quite easy to create! Bookmarked this for wuffy creations! *big grin*
I make them with frozen blueberries, as I have TONS in my freezer. They don't discolor the batter at all. You just rinse them in a colander under cold water (straight from the freezer, no need to thaw). I DO skip the crushed berry part, and instead just use all the berries whole. Due to being frozen, it works out well that way.
I've made them with chopped apple before too with a bit of cinnamon, for my blueberry hating son, he liked them a lot.
These are my lazy Sunday go-to breakfast.
Can't wait to give these a try! The blueberries at the market are nice and sweet this year, and at good prices! Perfect timing!
Duck egg hash with fingerling potatoes and spicy sausage.
Served in a mini cast iron withave crustini and topped with candied peppers.
I'd love to see your version of such yummyness...although it isn't especially sweet, it does have a few sweet notes from the sausage and peppers.

As I type I'm drinking a beautiful creamy cappuccino and about to indulge in passion fruit macaroons.

Hmm... where can wuffy source duck eggs in CO? *starts looking up merchants*
Candied peppers! What a neat idea! Yes, wuff can see that! And perhaps with some caramelized onions in the hash too. Nice spicy sausage to bring a kick and counter the sweetness. Maybe, Andouille? It has nice French influences with the Creole notes.
Okay, Vrghr is going to TOTALLY look into creating this! Thanks for the challenge!

I have quite literally 3 dozen muscovy eggs in my fridge right now, but I'm in Alabama *laugh* Great for baking and scrambled eggs. I need to make some salted yolks, I've read about them and been wanting to try them.
I've got four ducky gentlemen that need to head into my oven soon. Lovely critters, but they beat the live daylights out of one another over ladies. They ARE delicious, but quite a task to get them to that point. Not my favorite job to do. I've put it off for too long as it is. Poor fellows have nary a feather left on them from their little brawls.
Wuff will check the Facebook and such. Farmers markets are just about to start here. We kick off later in the season here, due to the weather.

Wuff is learning more about those "lardons". Why oh why hadn't wuff used them more often? They're like the Superman or Hulk of bacon! Massive, powerful, the essence of bacon-y goodness!
