I'm still struggling to find a good latex shining and shading method I like. Does anyone have any good latex tutorials they recommend?

But if you need help with choosing the right brushes for doing the mixing I probably couldn't help you there! I just do it at random until it looks nice. ;u;

Basically the key is having plenty of references to work from, both art and photographs. Now that video is meant particularly for realistic digital painting, so if you're doing cartoons or lineart, you have an additional step. You'd want to learn first how to draw it realistically, then you need to figure out how you're going to stylize it, like which parts you're going to simplify or exaggerate.
