Easy Potato Pancake Recipe

Telbasta's Blender Potato Pancakes
2 Cups Raw Potatoes (peeled, cubed and patted dry)
2 Eggs
1 med Onion quartered (optional..can also sub onion powder)
1/4 Cup All-Purpose Flour
1 tsp Salt
3/4 tsp Baking Powder
Dump everything in the blender, cover, and blend 5 Seconds (I use lower settings 3-4 out of 10 Speeds)
Push down potatoes and scrape sides of blender if needed to clear sticking dry ingredients
Blend for 5-10 more seconds until just slightly chunky. Smooth is ok too!
Pour on hot greased griddle/pan. Brown and turn to get both sides.
You can also roll the pan just after pouring the batter to make a thinner pancake (good for stuffing).
These are good with sour cream, applesauce, butter and maple syrup, or stuffed with a pineapple whipped cream blend.

that recipe's nice, but my cooking technique definitely needs more practice!
I estimate I could have made 10-12 3-4" pancakes, but my foul-ups were so bad that I had to trash most of them.
after using too much oil on the first try, putting the batter too close to my skillet's edge on the second, and WAY overcooking the last pair, I only managed to get three good pancakes out of this.
at least I got some good experience in what NOT to do with this stuff! :)
the three that were worth eating were pretty good!
I tried two with sour cream and one with applesauce.
I usually prep them over medium heat with just a bit of oil spread over the surface of the pan with a paper towel.
so, next time, tater pancakes and tater skins on the side. <3
