Long story not so long, I got fired Saturday night from my job of 5 years. Bummer and a half!
In hindsight I could have done things better, I could have been more "interested" in my job but... Most of this year leading up to saturday night I had been pulling multiple doubles per week; 50+ hours. Since the arrival of the new Executive Chef my hours were cut back to "normal"working the morning shift and only 1 double per week. About 2 weeks ago he hires on a Souse Chef; ok good, we let the previous one go back in Feb and I kinda took on his morning hours. The weekend after that he hires on a new cook; now I begin to worry. Then this week he's showing a new somebody around the kitchen, with an application in his, the chef's hand and I get a really bad feeling. 3 cooks in 3 weeks... someone is gonna get cut because we are NOT budgeted for that in the kitchen.
Two weeks ago I got a write-up for forgetting to wrap up my station on a sunday; oops, but I got it and started to label things better and trying to otherwise keep things in date. Well, I thought I was doing it right; wrong. I get pulled into a meeting Saturday night and he has a stack of photos of stuff out of date by a couple days and I try to defend myself that, I'm not the one working most nights! In the end, I got axed. I have a strong feeling he was gonna get rid of me becuase I'm the oddball in the kitchen. However, I'm not the only offender.
Begin Rant:
So if this guy wants to fire me for out of date stock he needs to look at himself. we have had gallons of stocks in the big cooler he does not want to freeze, he is big against freezing things, and some of it is 2 weeks out of date. On top of that; these stocks suck! I've never seen anyone make a veggie stock over the course of 2 days or a 3 day chicken/beef stock. On top of that, he treats the stockpot like a trashcan, throwing whatever he can into it thats dirty, old, bruised, oxidized, and whatever. What really shook me is me was making one a few days ago that had to ahve had a heavy handfull of dried cloves in it. I've seen such things in other places but these, witches brews, of stock are just... unbelievable. Then of course they're 2 weeks out of date in the walk in cooler and nobody tosses them.
When I mentioned earlier that he had hired 2-3 new cooks I find out that 2 of them already know him from his time at Lock 27 and abroad,; so it seems to me he was already planning on replacing the current crew with his own. AND, if thats the plan, he's gonna hurt himself more than he thinks casue if he tries to replace the night grill cook, the baker will follow; they're dating. Even if he has that covered the only person, cook, he can replace is a little old lady with autism who is too old to fire! Literally, she's been there 45 years, and firing her would force her into retirement. A dick move by anyone's standards. I think; in the end; he will screw himself over trying to rebuild a kitchen as he is use to, a microbrew kitchen; which is NOT a country club. Just Saturday he screwed himself in the ass a 3rd time by not making enough food for a catered dinner. He can run a bar kitchen, but he will fail here; the clentel is older and have higher expectations.
