The Howling III has one, where a ballet dancer transforms during a performance, while the original has a news reporter transforming during a newscast.

I think those are the only cases of transformation occurring at inopportune times in the movies, and I wholeheartedly agree with you

Dragonsworn by Sherrilyn Kenyon has very close to that actually plot wise just its a dragon prince falling in love with a human "dragon" slayer who is yeah it gets complicated all her Dark Hunter books are awesome like that you should pick up the series

I remember this animation where it sort of pokes the trope, where a witch gets tired of having the story go over and over the same way (where she kidnaps a princess, the knight finds them and beats her, happily ever after). So she turns the princess into a dragon, and disguises herself as the princess. The knight of course comes and tries to attack the dragon princess, acting all arrogant about it, and the princess gets upset at him for daring attacking her, while trying to explain how she was cursed. She gets fed up, and somehow gets them to show the witch disguised herself and the knight is upset realizing what happened, though she was done. She uses the witch's wand to make it so she can switch between her normal self and her dragon self, and flies to go back to her home, leaving the knight and witch alone.

I remember an OLD video with a story like that!

Funnily enough, i have an idea of a story where a knight rescues a dragon princess from a tower. The only difference is that it's not a romance as the dragon is only a child. Also, there's no transformation.
