There's a book called The Prince of Whales, about a young humpback whale who sings in his sleep and gets kicked out of his pod because they're afraid he'll attract whaling ships. The whole book is him exploring the sea and meeting different creatures.

I am a big fan of book with a non-human animal point of view. It is hard to find ones that don't focus on dogs, cats, wolves, or common wildlife found near human environments (ie mice, rats, rabbits, foxes, deer). Here are some of the more unique animal POV stories I've read: The White Bone, by Barbara Gowdy (African elephants). Beak of the Moon, by Phillip Temple (Kea). The Ghost and Its Shadow, by Shaun Hick (Australian crocodilians). The Stonor Eagles, by William Horwood (White-tailed Eagle). The One and Only Ivan, by KA Applegate (Gorilla). Silverwing, by Kenneth Oppel (bats). Raptor Red, by Robert T Bakker (Utahraptor). If you want more I highly recommend searching the 'xenofiction' tag on GoodReads, where you will find literally hundreds of non-human POV books, most of them animals!

I would possibly suggest one of my favorite series by Tamora Pierce called The Immortals (Book 1 Wild Magic, book 2 Wolf Pack, book 3 Empoeror Mage, and book 4 The Realms of the God's) it mostly is fantasy but it includes more fantastical animals like dragons, griffins, undine, ect and the main character's discovery of the magic that ties her to animals in general ^^
