Old Fashion Banana Bread
(Banana Bread that is so comforting and warm, you’ll want to cuddle up with it on the couch with a good movie, a blanket, and glass of milk. Also perfect for a quick morning breakfast with coffee!)
**Easy Difficulty**
Serves 4 to 8
4 Ripened Bananas
1 Egg, beaten
1 cup / 130 g All-Purpose Flour
1/3 cup / 80 ml Butter, melted
1 cup / 200 g Sugar
1 tsp / 5 g Vanilla Bean
1 tsp / 5 g Baking Soda
½ tsp / 2.5 g Salt
1.) Peel Ripened Bananas and place them in a large bowl. Discard peels. With a wooden spoon, mash the Bananas into a sticky paste. Then mix in melted Butter, Sugar, Egg, and Vanilla.
2.) Now to add the Dry ingredients. Mix in Salt, and Baking Soda into the wet Ingredients until they are well incorporated. Lastly, add the Flour and mix well.
3.) Pour mixture into a buttered loaf pan (Standard 4 x 8) and bake in a preheated oven set at 350 degrees F. / 175 degrees C. for one hour. You can check the doneness with the wood toothpick method. When done, remove the pan from oven and let the Bread rest and cool while still in the loaf pan. Once the Banana Bread is cool enough to touch, slice and serve with a glass of milk, coffee, or even some ice cream. Enjoy!
Extra Info: Banana Bread is one of my favorite childhood memory foods. My Grandmother, who I owe much of my love for cooking to, use to make Banana Bread all the time. Practically every week! I never really knew the reason and as a child I never asked her. It was one of those things as an 8 year old boy, I just accepted. Like, why Grandma loved poodles, or why she smelled of bengay and jasmine. It was just a fact I never pondered as to why these things were. Her Banana Bread, however, was just so good, I didn’t need to think about it. I just ate it, and I ate a lot of it too. She probably made Banana Bread so much because she thought I loved it, and she loved me, and so off to the kitchen she went to bake. But, I only ate so much Banana Bread because I loved her, and so, my love for her made me love Banana Bread. The cycle was never-ending.
To this day, as a grown man, I still can’t have a slice of Banana Bread without thinking of her and the smile she‘d have on as she watched me take my first bites. I miss her dreadfully. She passed away almost 3 years ago, and I never got a chance to ask her why her Banana Bread tasted so good. Was it a special ingredient? Did she add Almond Extract? Did she use a special type of Flour? Or, was the reason why she made the best Banana Bread in the whole wide world was because she loved me? Maybe all of the above.
I don’t think I’ll ever be able to recreate her amazing Banana Bread, and I don’t think I want to. Nothing would feel like it could compare, and I want it to stay that way, but that doesn’t mean I will give up Banana Bread. On the contrary, I love it even more. So, take this recipe, and any other recipe you happen to find in your life, and put as much love as you can into it, because someone, a spouse, a friend, or perhaps a cheerful, hopelessly dorky, 8 year old future Chef, will think it’s the best thing in the Whole Wide World.

Even though I was a professional Baker for lots and lots of years(!) this looks perfect. My family's recipe was from a hotel in Hawaii that has a darker and more cake-like texture. Though baked in a loaf. Higher amount of sugar. I am going to make yours, and I'll let you know how it was! Thanks for sharing the recipe!
