Chicken with that special something from the kitchens of
faydyn
I raided my pantry and made this.
I didn't use a recipe, so this is an approximation
you will need
A tagine Dutch oven or slow cooker
2 chicken breasts cut into 1 inch cubes
1/4 cup of blanched almonds
1 tiny box of raisins (about 1/4 cup)
1 cup of butternut squash (1 inch dice)
1 tsp. minced onion
2 tsp. curry powder
(I used a curry blend I custom made a ways back. It was a blend of cinnamon, nutmeg, allspice, cayenne, pepper, ginger, cumin, paprika, cardamom, turmeric and black pepper)
2 cubs of chicken broth (from bullion)
2tblspoons honey
method:
Sear chicken until browned add onion, almonds, raisins and curry cook 2 minutes more
add squash, chicken stock and honey bring to a boil
cover and reduce heat, cook on low for 3-4 hours
remove cover and cook on high till most of the liquid has evaporated (and the sauce looks slightly thick and syrupy
serve with rice pilaf or couscous (I topped mine with roast pepper)
Note: if you are using a slow cooker sear everything in a separate pan and add all ingredients to the slow cooker. The cook time WILL vary
happy cooking
