From Chris: I think this would be closer to either an "ugly betty" cake or a "slump" :B
But an interesting recipe from
, see what you think!
This is a recipe from my grandmother. It is super delicious!!
What you will need:
-fresh blueberries (I used 3 pints for this pan. You can use as many as you feel comfortable with. I think 3 pints turned out nicely) You can also use frozen blueberries but they tend to make it very liquidy. Canned blueberry pie filling will also work.
-one can (20 oz) of crushed pineapple
-3/4 cup sugar
-one box of yellow butter recipe cake mix
-1 1/4 sticks butter (10 tbsp)
-1 1/2-2 cups chopped pecans
Prep:
- Preheat your oven to 375 degrees Fahrenheit
- Mix the blueberries, sugar, and pineapple together in your pan. I believe the pan I used is a 9" circle pan.
- Sprinkle the cake mix on top. It seems like a lot, but it's the right amount.
Then slice the butter into squares on top.
- Bake for 30 minutes. After 30 minutes, remove it from the oven, sprinkle the pecans on top, and bake for another 15 minutes.
My grandmother serves hers cold, but I love it hot out of the oven or at room temp.
VARIATIONS.
You can also make this with cherries.
Without pecans or with different nuts.
And also without pineapple.

It's super delicious lol It has mandarin oranges, pineapple, cool whip, pudding, and of course cake! I don't know why it's called a pig pickin' cake. Maybe because a lot of people took them to pig pickin's? -shrugs-
I'm sure it all really depends where you go. I'm from North Carolina, and North Carolina and South Carolina are completely different even though they are right next to each other.

Oh, I'm in Florid-ia! State-by-state differences make sense though. Maine's all the way up North, and a good portion of the people I went to school with (towards the end) were "redneck". Albeit back-woods "rednecks" and southern "rednecks" aren't all that different.
That cake sounds delicious btw! Sounds like something I'll wanna make <3

Here's a good recipe for how I make mine.

A lot of people make it into three layers, but I just do two. If you make it, let me know what you think :)
I have met a few redneck people here in Iowa and they are pretty much the same as rednecks back in NC. The only difference is, here there is a handful of them and they all live outside of the city, and back in my home town everyone was redneck no matter where they lived, in or outside of the city lol
