This is a recipe that I decided to try out today with my left over filet that I had. A rare filet mignon on a black bean patty. The patty is vegetarian, so excellent to switch out the steak for the veggies in the group. It's topped with additional black beans from a soup that I was making on the side. Plus cilantro.
Ingredients
1 Filet Mignon tenderloin
1 oz. can of black beans (drained and washed)
1 cup of bread crumbs
1/4 cup of chopped red bell pepper
1/4 cup of chopped onion
1 tablespoon of extra virgin olive oil
Salt and pepper to taste
Chopped Cilantro
Once the beans are cleaned, put them in a bowl and mash them with a fork or potato masher. After that, add the pepper, onions, oil and bread crumbs and mix. Then form them into burger patties (should make about 4 to 6 depending on size). Heat a grill or skillet with a tablespoon of oil. Grill the meat first to your liking and, once done, allow the meat to rest for 10 minutes. While it's resting, place the patties in the skillet/grill and cook for about 4 minutes on each side until a golden/black color. Put the patter on the plate, top with tenderloin and garnish with cilantro or any other garnish/sauce you wish.
***Leftover patties are great for vegetarian burgers***
