Memorized the recipe when a server made it in front of me at a favorite Italian restaurant. I recreated it, perfect.
Ingredients:
1 egg yolk
1/2 teaspoon Anchovy paste (about one filet mashed with a fork)
1 cup of finely shredded Romano cheese
1 teaspoon of Dijon mustard
Extra Virgin Olive Oil
1 teaspoon of fresh ground black pepper
1 cup of croutons, preferably home made
2 heads of Romaine lettuce, washed and chopped
Juice of 1/2 a lemon
Mix all the ingredients except for the lettuce, cheese and crouton. Once they are well blended, add the lettuce and cheese and mix thoroughly. Add crouton before serving. Add additional black pepper to taste
