really simple recipie
makes 8 wedges
you will need
2/3 cup of unsalted butter (10 2/3 tbs)
1/2 cup sugar
1 1/4 cup all purpose flour
1/2 cup rice flour
1/4 tsp baking powder
1/8 tsp salt
method:
preheat oven to 325 grease a shallow 8-9 inch cake pan
combine flours baking powder and salt
cream butter and sugar
stir in dry ingredients and mix well (with a paddle attachment if you have one)
the resulting dough (if you want to call it that) is extremely dry and granular and resembles sand
press dough into pan, as you do the consistency will change
prick/dock surface with a fork and score with a shrap knife
bake 40-45 minutes
let cool for at least 5 minutes
re cut wedges and un-mold
make sure that you let the pan cool adequately otherwise you will have a crumbly mess
store in an airtight container
