This is one of my favourite meals. roast rabbit in a bed of vegetables.
The recipe for this was pretty simple.
All you need is a slow cooker and just chop up some potatoes, carrots, onion and some mushrooms in to bite size chunks and set in the bottom of the slow cooker.
Next you take the rabbit and cover in salt, black pepper and some garlic powder and set it on top of the vegetables. Once that is done just pour a little sun dried tomato salad dressing over every thing and let it cook on low for 6 to 8 hours or until the rabbit and vegetables are cooked to your liking.

Wuffy agrees with Chris, also having had it before. Very mild flavor, somewhere between pork loin and chicken. Perhaps a tiny bit more 'gamy' taste, depending how the rabbit was raised. Texture a bit "sturdier" than chicken, but not nearly as robust as beef or pork, that, too, depends a bit on how the rabbit was raised. The farm-raised versions are a rather nice ingredient to work with!
