Bacon, Egg and Cheese Frittata!
A yummy, hearty brunch for a weekend!
Ingredients:
One small potato or half a large baking potato, cooked
Three eggs
Shredded cheese
Bacon bits
A quick note about hash browns, home fries et cetera: Always start with a cooked potato (baked, boiled or nuked); frying a raw potato tends to take awhile and give dubious results. For microwave purposes, a large baking potato counts as two potatoes.
1) Take the potato and grate it into a hot, oiled frying pan (I use canola oil spray). Turn frequently until the grated potato is evenly browned.
2) While the potato is browning, take the eggs and break into a glass jar. Seal the lid and shake briskly for 1-2 minutes or until eggs are evenly mixed.
3) Pour eggs over browned potato. Add shredded cheese and bacon bits to taste.
4) Cook to desired doneness. I like mine a little runny.
5) Enjoy!
