Heya, since I am in a FA group that shares recipes, I should I could start to share some, too. :)
Sooo, here we have something I tried the first time to cook today. I really like it and it will be in my
recipe arsenal from now on. :)
What do you need?
- 1 Zucchini
- 1 eggplant
- 2 tomatoes
- 2 small onions
- 1 yellow pepper
- 1 green pepper
-1 garlic clove
- tomato paste
- salt
- pepper
- rosemary
- olive oil
1. Cut all the vegetables into dices, make sure to remove the watery inner parts of the tomatoes.
(Slice the eggplant at the end, so it doesnt turn brown). Dont hesitate to make small dices. I made
quite big ones on my first try and I think smaller ones will be better for the result.
2. Roast each vegetable separately with olive oil.
3. Once you have roasted all of them put them all together in a pot and add some tomato paste
4. Heat everything up and spice it with salt, pepper and rosemary.
5. You can cook it until everything gets mellow or just a bit to have your vegetables al dente.
It sure isn't the best Ratatouille in the world, but it's really simple and quick to cook and it taste awesome.
You can eat it with boiled potatoes, rice, noodles or whatever you like. :)
