A really interesting dish from

Okay, here's something I tried to cook today for the first tie and it came out really nicely!
It is really popular in the region I live in and we often here enjoy a nice white wine with it

What do you need?
- a baking dish for quiche (28cm Ø)
For the dough:
- 250 gr flour
- 1/2 teaspoon of salt
- 120 gr butter (important, it must be COLD!), cut down to flakes
(works fine if you put it in the freezer for a bit and rasp it once you get it out)
- 1 egg
- 2-4 tablespoons of water, milk or white wine
for the filling:
- 500-600 gr onions cut in dices
- 100 gr smoked ham cut in thin stripes
for the icing:
- 4 eggs
- 200 gr cream
- 200 gr rasped cheese (for example Emmenthaler or Gouda)
- salt
- pepper
Alright, lets get going! First we need to prepare the dough:
1. IMPORTANT: the dough must be prepared quickly, so don't waste time
- Mix the flour with the salt and add the cold butter flakes and mix it, grind it with your hands until you have really fine crumbs.
- add the egg and the water/milk/white wine (whatever you want) and mix it until you get a nice dough
- form the dough to a ball and wrap it in plastic wrap
- put it in the fridge for roughly half an hour
While you wait for the dough you can prepare the filling and the icing:

preheat your oven at 200° C (400° F)

For the filling roast first the smoked ham and add the onions. Roast them until they get soft but take care they don't get brown.

For the icing mix the cream and the 4 eggs. Spice the mix with salt and pepper, then add the cheese to the mix
Back to the dough:

- take it out of the fridge and unwrap it. prepare your table wit a bit flour and press the dough so that its around 2-3cm thick. take a rolling pin and roll it over the dough until it's Ø is around 3-4 cm bigger than that one of the baking dish
- put the rolled dough into the baking dish and make sure the base and the walls are covered with the dough
- take a fork and sting it a few times into the dough on the base
Add everything together:

- put the roasted onions and smoked ham on the dough and spread it
- add the icing over the onions and spread it, so that everything is covered
- put it into the oven and bake it for 30-35 minutes
- before eating, let it rest for 10 minutes
Try it, it really isn't hard to make and it tastes great. Also it is really filling. :'D
