Cream cheese, softened 16 oz
Butter, softened 1 cup
Sugar 4 cups
Eggs, large 8
Cooked sweet potatoes, mashed 5 cups
AP flour 6 cups
baking powder 4 tsp
baking soda 2 tsp
salt 1/2 tsp
cinnamon 2 tsp
nutmeg 2 tsp
vanilla 2 tsp

Makes 2 loaves

Preheat oven to 350F
Sift together the dry ingredients and set aside
Prepare the pans by spraying with pan spray
Cream the cream cheese and butter together until fluffy
Add the sugar and beat until blended
Add the eggs, one at a time, and blend until incorporated
Add the sweet potatoes, blend until incorporated
Add the dry ingredients and blend until incorporated
Add the vanilla
Bake at 350 for 1 hour
