is it really a thing that a few people here jump of shortly before the pledges get send (and may come back later the month)? It seems a bit like this :( ... I hope I'm just wrong

I think this is their answer to that concern. Where if you cancel payment, you'll still be charged because you still got to see that person's work for the month. I don't think you have to worry, but if the issue persists, you could definitely contact them.

If you are doing a monthly charge, then people can see the work as soon as they pledge, before they've been charged. If they cancel before the end of the month they won't be charged and they've seen your work for free. Some people are ... well fill in the blank. A work around some use is to post a zip of all the work you want to offer to patreons on the 1st, once the payment cycle has started.
Patreon now has the Option of Charging up front i.e. When a Patron first Pledges they will get charged immediately upon pledging and then get charged the normal pledge amount at the beginning of the new month. So with that option it wont do them any good to join, see the appropriate stuff, and then back out before the end of the month.
