I'm starting to think Souffle might have been framed by Jack for the arson and resulting deaths and he's in jail. There's still the mysterious question of what these dreams are, if they're more than memories or not or if this is supernatural contact. Then there's also how can Gem save Zee-Zee? We talkin Time-Travel or are they suffering some purgatory and Gem needs to give them peace? Still so many questions and I can't wait to find out the answers! =D

Souffle might have had certain difficulties to take Gem in. Being a single parent isn't as easy as a pair. I can picture Souffle leaving Gem at the daycare while he goes to work and every night they have their special moments together.

Jack is possessing the rl Souffle and that's what he means by "I'm alive for the moment" because Jack is trying to take over Souffle's body and if that happens then Souffle effectively dies in the process.

That's just my theory though.
