Photoshop has a lot more control to it than Open Canvas. They're both good programs, it just depends on what style you like to work in. I'd do a search on some open canvas tutorials on DA to get an idea of what you'd be looking at.
I like to use Photoshop myself for coloring. It just depends on which ever program I'm too lazy to click on XD
