This here is an OLD FAVORITE of mine that I ONLY got to have every other year at Wigilia, which is a Polish tradition where you eat specific foods on Christmas Eve.
I'd been begging for YEARS to have this recipe and FINALLY I got it!
So have one of my childhood favorite foods!
(This recipe is directly from my Dzia Dzia, thats Polish for Grandpa, and he sent it via text, I hope you all can understand it!)
Ingredients:
Medium Onion, sliced
Pound or so sliced mushrooms your choice on kind
1/4 cup Pearled Barley
Water
Butter
Flour
Quart of Half and Half
Milk
Salt
Instructions:
Cook barley and keep the water, dont use too much water
(I put in about 3/4ths cup when I did mine)
Saute the mushrooms in batches, until just starting to brown
(I did mine all at once using 1 tbs of butter)
Saute onion until starting to brown and curl
Make a roux with butter and flour using 1:1 amount
Depending on the soup amount start with 4tbs and cook until brown
Put the barley and water in a large pot over medium heat
Add the mushrooms and onions
Stir in the half & half
Add some milk
Bring to a simmer
Add some hot liquid to the roux, stirring until smooth
Add the roux mixture to the soup and stir until thickens
Make more roux if need be
Add milk to thin
Taste and adjust to salt tastes
Soup will thicken when cool
And my favorite part!
You have to sing Polish Christmas Kolendie (carols) while you make this or it will taste horrible

This has got to be in my top 5 fav recipes I've made so far. The recording came out fantastic and I'm super happy with how it turned out! AANNNNDDDDD This is the legit recipe my Polish Dzia Dzia gave me, the exact recipe he's been making every year for as long as I can remember!
