My interpretation of the whole color scheme is this.
Yellow shirts are command chain. Meaning, anyone on the path to command a starship is wearing a mustard tunic.
Blue tunics are sciences. Medicine, astronomy, botany, so on.
Red is everything else. But most importantly is security.
What is generally the highest risk profession of the aforementioned? Security.
Now I'm going to wash my face in cold water until the embarrassment fades.

In the next generation. Red became the command chain, mustard the engineering and general sciences chain, and blue green became medicine. They have also have colored linings for the uniforms in films 2 through six, but I can't entirely keep track of them.

The episode in question was "Balance of Terror" when the enterprise when against the first Romulan cloaked ship. the couple was married in the beginning but he later died; he was in phaser control and a gas line blew. he died from the fumes while Spock fired the phasers that knocked out the Romulans.
