Why is it every time I hear about an animal with polydactylism it's a cat?

Maybe because humans have specifically bred the trait into cats, and encouraged it. Just like flat-faces on champion Persian cats. In dogs, it's likely more of a hindrance, especially in working dogs.

Polydactyl humans generally have the extra fingers and/or toes removed...
