This is a family recipe that my mom used to bake frequently when I was a kid. I was telling a friend about them not long ago and realized that it has been years since I made them myself. Enjoy!
Orange Cookies
1 cup sugar
1/2 cup vegetable shortening
2 eggs
1 orange rind (grated)
3 cups flour
5 tsp baking powder
1/2 tsp salt
1/2 cup milk
powdered confectioner’s sugar
Preheat oven to 350 degrees F.
Grate the rind from an orange as you see in the photo, using the fine side of a cheese grater.
Use an electric mixer on high speed to cream the shortening and sugar together. Blend in eggs and orange rind. While mixing in the flour, salt, and baking powder, add some of the milk from time to time in order to keep the dough from becoming too dry.
Form the dough into balls slightly smaller than a golf ball and roll in powdered sugar. Place on a cookie sheet and flatten slightly. Use the back side of a knife to press the tic-tac-toe (hash tag, for you young kids) patterns into the tops of the cookies.
Bake 15-20 minutes and move to a cooling rack. The cookies should be soft, not crunchy. Yields about 3-4 dozen cookies.

I suppose one could substitute the rind from two or three lemons for the orange rind. I do like lemon cookies and may have to give that a try. And yes, all of the measures are in English units: cups, teaspoons, and degrees F. So that would be approximately 175 degrees C.
