The young knights, still in training, learn first to cut through fabric and wood and whatever else a training dummy could be made out of. It is upon the battlefield when their sharpened blades finally cut through scales, through fur, through skin. But to cut through magic is an entirely different skill.
Sir Gallade definitely was well-trained in the way of the swords. This was in stark contrast to his master and mentor, Sergei, who was one of few knights who excelled instead in magic. It was Sergei, upon seeing Gallade's proficiency with those twin blades, who decided that he'd teach the green knight to cleave magic itself. It was a long process, with much of that time spent teaching Gallade magic theory. There are many ways to think about magic, but Sergei's favorite modality was to think of magic like a tapestry. Magic was this ever-present force that existed in its pure, difficult to harness form. It was the job of the spellcaster to "weave" the magic into a usable spell. With this kind of thinking, a spell is seen as magic held together and woven; theoretically, if the spell could be cut in such a manner, it could be unwoven. This is what Sergei sought to impart on Gallade. It wasn't until months later that Gallade put that training into practice, and even then there as much trial-and-error. In order to cut through his first Fireball, Gallade had to be hit by several dozen others until he got it right.
Magic itself is inherently wild and unstable. And while Gallade agreed that mages could organize that magic into spells, it became apparent to him that the wild magic could only be tamed to such a degree. Even as Fireball is cast, the magic that makes up the spell is contained, but not stable. It is always dynamic and always changing. The magical bonds that hold the spell together always shifting, making it all the more difficult to cut the spell at its very core. Gallade eventually managed, focusing all his senses on those incoming spells, and feeling at that very last moment where the spell was held together... striking at it.
