Zhy is one of my characters and i figured she would enjoy this.
8 red bell peppers rough choped large
4 green bell peppers roughly chopped
3 med yellow onion quartered
Roughly 4 cups of oil of your choice. (I used canola blend i think olive would have a thicker consistency)
1.5 tablespoons rubbed sage and thyme leaves
1 Tablespoon garlic powder
1 teaspoon sweet smoked paprika
Salt and pepper to taste
Green onion for garnish if desired
Mix 1 cup oil, seasonings, and vegetables in a large bowl till evenly coated.
Bake at 350 for about 15 min or until tender and slightly blistered. Remove and let cool down
In a blender or with a emulsifier stick blend until smooth slowly adding oil
Sift trough a sieve pressing to the sides to extract as much liquid as possible
I ended with about 1.5 quarts of pulp and 4 quarts of soup.
