Helpful hints from yelleena:
1. If you can't get Sushi rice, short grain rice will work well and be a little cheaper.
2. If you are having cucumber or carrot in your sushi, try using a peeler to get thinner strips (ribbons) of vegetable that can then be cut in half or used whole.
3. Prices of seafood varies from region to region so if its expensive at the moment (or you don't like the idea of raw fish) then try using a drained 400g tin of tuna or salmon, mash fish well in a bowl, add 1 tbsp of mayonnaise (helps it spread), a little salt and pepper to taste and use this instead of raw salmon or shrimps.

From Chris: I will also add (since I have made sushi as an experiment) - not only do you want a thin layer of rice on the nori roll, you also want to leave at least an inch of nori without the rice to cover over the roll. You can always moisten with water / rice vinegar to seal it together.
When making the rice, its usually 2 cups water to one - two tablespoons rice vinegar, and some recipes will call to also add in one teaspoon sugar as well. Jasmine rice works well, as well as standard white rice - it helps to soak the rice first, then rinse it a few times.
Also - you do NOT have to use a fancy sushi / sashimi knife to cut the rolls themselves. You can always use a regular serrated blade and it will still cut the roll clean.
