This originally was a great way to get rids of leftovers since it's simply a dish of mixed goodness. I, however, took it in the breakfast direction and made 2 servings using these ingredients:
Extra Virgin Olive Oil
Half a bag of hash browns (I utilize Simply Potatoes hash browns)
2 eggs
half a pound of sausage (This specific run utilized old sausage links from days past)
2 stalks of chives (or chives from the pantry if you don't grow your own)
cheese
1--add a pool of olive oil that reaches the side of the pan and turn on the stove to a below-medium heat (I used 4)
2-- Add your hash browns into the oil mix and let them cook for at least 5 minutes
3--get another pan going and throw the sausage in small globs into said pan
4--put 2 eggs into a bowl and beat the devil out of them
5--using the proper kitchen shears, cut up the chives right over the has browns (no need for a cutting board for this step)
---> chives from a can should be shaken onto the potatoes
6-- add in your eggs and cheese, and mix it in with a spatula (the bottom of your hash browns should be the color used in the name of this form of potato)
7--Put it into a bowl and serve!
TIPS
Omit the sausage for a vegetarian experience that's sure to satisfy.
Do not adjust the heat on the hash browns; impatience leads to burnt potatoes.
The cheese variety can be whatever you want. I used an aged Italian blend this time.
If you hyappen to have leftovers, you will get "like new" results by re-frying everything in a pan with a little oil.

Peppers (sweet preferably, but I guess hot could be a good addition)
Hot Sauce as a finishing topper (I like Tapatio best)
Mushrooms
Spinach
