Hello and welcome all you hungry animals, want to cook something extremely tasty and healthy? you came to the right place!
So what do we need for two servings?
The base:
- 250g of frozen wild salmon
- 300g of Jasmin rice
- One fresh broccoli around 500g
- One can of coconut milk (400ml)
- A dab of butter
- Tinfoil
The spices:
- Soy sauce
- Rice vinegar
- Chili flakes or fresh chilis
- Garlic powder
- Salt
- Black pepper
- Madras curry powder
Let's prepare:
These steps can be done parallel.
Wash your broccoli and cut it into small roses, now cook your broccoli in salt water, steam it or use your microwave to prepare it, its up to you and your preferences.
Start to get water boiling with a pinch of salt for your rice / start cooking it (sure you can also use a rice cooker or a microwave but bear in mind, that it could change the cook timings that everything is ready at the same time) or any other way you like to prepare it.
Pre-heat the oven to 400F / 200C, take the frozen salmon and put in on a sheet of tinfoil, add a dab of butter on top and close it up. Put it in the oven for 20 minutes.
While the rice is cooking and the salmon is in the oven, take your now cooked / steamed / microwaved broccoli and cut it into smaller roses, throw it in a pan on medium heat.
When it starts to sizzle, add garlic powder, salt, black pepper, chili flakes of fresh chili, the coconut milk and Madras curry powder and let it simmer for a minute or two, when the curry powder is dissolved evenly and you get a nice yellow curry color start to add soy sauce and rice vinegar to taste.
Let the sauce simmer on low heat until the salmon and rice are ready.
Now plate it the way you like, stacked or you can put the rice in the sauce, put the salmon in and rip it into pieces like a real bear! ;)
