For my family, these cookies signal the beginning of the holiday season. I can't remember a Christmas when these weren't the cookies left out with milk for Santa Claus... and I also can't remember a Christmas when I didn't steal downstairs after bedtime to snag one or two for myself!
Ingredients
1/2 cup butter (2 sticks)
1/2 cup peanut butter
1 1/4 cups flour, all-purpose
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1 small bowl granulated sugar (for rolling)
3 dozen hershey's kisses
Directions
Preheat your oven to 375 degrees. In a bowl, mix, with a spoon or electric mixer, the butter and peanut butter until very well incorporated. Add 1/2 cup of flour, sugars, egg, baking soda, baking powder and vanilla. Beat the mixture thoroughly until combined. Add in the remaining flour. If necessary, cover and chill the dough in the refrigerator until it becomes easier to handle.
Shape the dough into 1 inch balls (with your hands -- don't be afraid to get messy!). Then roll the balls in the additional reserved sugar. Place them on a prepared cookie sheet. Bake in the oven for 7 to 9 minutes, until the bottoms are slightly brown. Immediately after baking, press a hershey kiss into each cookie while they're still warm!
