Chocolate and coconut goodness from sabresage !

Another old picture. One of the easiest things for me to make if I need a quick, last minute dessert for arriving guests.
Ingredients
3 cups of shredded sweetened coconut
Condensed milk
1 teaspoon Vanilla extract
Semi-sweet chocolate
Preheat the oven to 375. In a bowl, put the coconut and pour enough of the milk until it begins to stick (over pouring will cause a puddled mess when in the oven). Drop in the vanilla and mix thoroughly. Using a spoon, form into one inch balls and place on a greased baking sheet and put in the oven for about 20 minutes or until golden brown. Work in batches if necessary. Take them out and leave on a rack to cool. Melt the chocolate in a small pan and you have a choice of drizzling the chocolate or dipping the bottom into it. Refrigerate to cool the chocolate down and serve at just below room temperature.
