My favourite way to kill a day is cooking on my charcoal BBQ.
Recipe:
Score the fat of the brisket with a sharp knife then cover both sides of the brisket with Montreal steak seasoning, Tex mex and freshly ground black pepper.
With my charcoal BBQ I set the tinfoil tray next to the hot charcoal and filled it up with 2l bottle of apple juice and a box of beef broth.
Then I set the brisket over the tinfoil tray opposite the hot coals and let it cook at 300 degrees for 4 hours.
Then I took the brisket off and wrapped it up in tin foil and set it back on the BBQ for another hour. When that was done I unwrapped the brisket and let it sit for 10 min.
From Chris: The reason *WHY* this is so brilliant is, Undertaker did this as a "Texas two-step": That is, one part in cooking on the grill, and then finished cooking it in the oven wrapped in tin foil.
This is an -essential- part of cooking a big brisket like this; because, if it was left uncovered, it would either burn or dry out completely...and you would end up eating a very expensive brick of shoe leather XD
