This was a recipe that was recommended to me by a friend. It's great to make as a cool treat for the hot seasons, but you really gotta like pineapple to enjoy it.
What You'll Need: (Cake)
-1 box yellow cake mix (Don't worry about it's needed ingredients this time)
-4 large eggs
-1/2 cup vegetable oil
-1, 8 ounce can crushed pineapple with juice
What You'll Need: (Frosting)
-1 container of cool whip, thawed
-1 box of instant vanilla pudding mix (and it's needed amount of milk)
-1, 8 ounce can crushed pineapple with juice
(optional) Maraschino cherries with stem, for serving
Step 1:
-Combine all ingredients for the cake together in a large bowl. Mix well.
Step 2:
-Pour cake batter into a well greased cake pan and bake at 350 degrees for 25 to 30 minutes. When cake is done, allow time to fully cool (at least 2 hours).
Step 3:
-While the cake is cooling, prepare the vanilla pudding and set in the fridge. Pudding takes a few hours to fully solidify so waiting for both to cool at the same time is your best use of down time.
Step 4:
-When both the cake has completely cooled and the pudding has completely solidified, combine the crushed pineapple and cool whip with the pudding. Gently fold them together to maintain fluffiness until all 3 ingredients are well incorporated.
Step 5:
-Pour pudding mixture on top of the cake and spread evenly. Keep chilled in the fridge for at least one more hour before serving. Top a slice with a Maraschino cherry and enjoy.
