Most clans evolved naturally from their animal ancestors, dwellers are the only ones that were specifically bred with gene splicing & magic for a single purpose. (Though many clans did have their genetics magically warped to a degree. The warlocks who used to rule them had little ethical concerns.)

That's one heck of an experiment to focus on in order to create an entire race for a specific purpose which is described here. I wonder if there were a lot of failures in their experiments before there was any success with the dwellers? I'm not any kind of specialist in science, but I know that any kind of research that revolves around getting a specific reaction and/or result during a certain test on a subject doesn't happen on the first try or anything.
Only one clan was able to use magic, the old warlocks. They were the rulers of all other clans and the ones who forced them into war.
There were only a handful of warlocks left in the world by the time the dwellers were created, they brought their own clan to ruin with their magic. Each warlock was jealous and fearful of the other warlock's power, leading to feuds that destroyed them one by one.

They were their own clan, looked kinda kinda like demons crossed with dragons. (Though it's possible they used to look differently and only made themselves appear that way to be more intimidating.)
No other clan was able to use magic and the knowledge of it was lost after the Great Starvation, during which the remaining warlocks finally destroyed each other for good.

"Clan" basically means species. Different clans can't interbreed. A Dweller can only breed with a dweller and so on. So calling someone by the wrong clan name would be like calling a cat a dog.
Each clan has typical traits. Snatchers look reptilian for example, Striders are always centaurs with 4 legs & an additional mouth on the front of their horse-like body. The typical clan traits can somewhat vary inside a clan however (just like there's dogs of varying colors and sizes). Like not every Strider has horns, only some do.
