Spicy Vegetarian Fried Noodles
Itf you like the idea of eating healthy without earing meat, eggs or dairy? Then try this recipe!
Ingredients:
Yellow noodles
White onion (diced)
3 Shallots (sliced)
3 Garlic (crushed)
2 Bak Choy (sliced)
1 Potato (diced and soaked in water for 1/2 hour)
1 Carrot (julienne)
3 Chilis (sliced)
Salt & Pepper
Sweet Soy Sauce
Vegetable Oil
Piece of Ginger (diced finely)
Water
Red chili powder
Method:
In a wok at med heat with veg oil, stir fry the onion, shallots, ginger, chilis and garlics into the wok until soft and pale. Warning, keep it well ventilated.
Add the seasonings and root vegetables first and then soy sauce and water before letting it cook for 5 minutes or until the root veggies are soft. Stir occassionally and add water to avoid sticking
Add in the bak choy and yellow noodles into the mix before finally adding the red chili powder.
Plate and serve!
