Heya, it's been a bit. I did cook something earlier but I forgot to take a photo, and it was this recipe here so I just bought the ingredients again to make more.

The dip I made myself, I don't know the exact measurements and it's really up to taste but here's a rough idea of how I made it:
Lemayo Garlic Dip
For 2 Large Artichokes Mix together-
4 tbs Mayonnaise
1 1/2 tbs olive oil
Zest of one lemon
Minced Garlic to Taste (Cook it up until fragrant for a stronger flavor)
Juice of half a lemon (or to taste, I like the whole lemon)
1/2 tsp dried basil
Salt + Pepper to taste
Thoughts: This is my favorite way to make artichokes. My mom used to boil them and they tasted pretty good then, but when you cook in lemon juice and olive oil it just tastes so much better. I liked lemon butter as a dip for artichokes but when a friend told me to try mayonnaise, I never went back. But I did miss the lemon part of it, and I'd learned how to make quick sauces and dips from mayo and sour cream thanks to Hello Fresh. I took what I learned from them and made my own dip, and it's a big hit with both me and the roomie. And if you have any dip left over it goes great with bread!
