These two couldn't wait. I had to convince them to let it cool first. Family recipe coffee bars
2 1/4 cups (packed) light brown sugar (equivalent to 1 pound)
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 teaspoon vanilla extract
1 cup dark coffee
1 cup vegetable oil
Topping:
1/2 cup chocolate chips
1/2 cup coconut flakes
1/2 cup chopped nuts (walnuts, pecans, or almonds--now you know why the squirrels are into it)
Preheat oven to 350F
In a small bowl with cover (such as a margarine tub) combine the topping ingredients, cover, shake well to mix, and set aside.
In large mixing bowl, sift the dry ingredients (brown sugar, flour, salt and baking soda). Add the wet (remaining) ingredients and mix well. Pour into an ungreesed baking pan (jelly roll, cookie sheet, different names in different places, note left photo). Sprinkle topping over the top.
Bake on center rack in oven 30 to 35 minutes. Test with a toothpick. It's done if the toothpick comes clean. Cool complete. Cut into squares. Store in air tight container.
You can easily make half a recipe using a 9 inch by 13 inch pyrex-type pan.
Another award winning recipe (see my previous whoopie pies). Way back in my days as a scout, I adapted this to cook in a reflector oven. Took first place at that scouting event.
