Then of course there are the two canonical weaknesses that haven't been memed to death yet built deliberately into his suit by Palpatine as a fail-safe in case Vader ever turn on him; the control panel on his chest and force lightning.

I've heard about the Fail-safe and that's canonical, I thought it was just a book thing. I really didn't think about force lightning but it seems pretty easy to block with a light-saber.

Indeed. Vader can easily block blaster bolts, walk through fire and lava, survive in the vacuum of space and lift small starships over his head even WITHOUT The Force, but electric shocks can easily short out his suits life-support system.
