
This tasted good (a bit too much pepper but I'll modify the recipe here)
1 cup cooked rice
1 cup smoked salmon
1 cup chopped green onion
4 bell peppers
1 tsp pepper
1/2 tsp garlic
1/4 tsp sage
1/2 cup butter
4 tbsp lemon juice
Cut peppers lengthwise and blanch in boiling water for 5 minutes
melt butter and add lemon juice
combine all ingredients
sprinkle parmesan cheese in pepper halves and fill with mix
sprinkle more on top
bake in a foil-covered pan for 20 minutes at 350F
uncover and bake for an additional 15 minutes then enjoy
