Brand is trying to have Saida hate Roko. He knows how much of a pacifist she is, so by telling her the inevitable fate of being a volcano dragon, he's basically telling her that it's Roko's fault that she'll eventually be the cause of so much destruction if they don't switch back.
What Brand is really saying is - getting old sucks. Even for a dragon.
I don't blame him for being bitter and cynical, but, y'know, the one thing you don't lose as you age is your heart. You're the one that collects bottle caps for your hoard because it makes your neighbors happy, Raybrand. Not all volcanoes erupt all the time. Those that do erupt, if you've the sense to get the hell out of the way, deposit upon the earth the richest fertilizer the planet knows.
It's just not all bad.

True, but Saida isn’t a dragon. As a quetz, Saida has lots of family and worshippers loving her. As a dragon, most will end up avoiding and resenting her. Is that something Saida can handle? If they don’t switch back, they will have to live each other’s lives. Even if Saida would resign herself to this, Brand wouldn’t have saved a quetz if he believed that quetz should suffer. In a way, Brand is more upset for Saida’s sake than his own, because Roko got her involved and now they’re caged in each other’s bodies. As a quetz, Brand would have an better life, but that means condemning Saida. It may be why Brand is so focused on switching back rather than Roko’s situation. Besides, how would Brand help Roko? He is dead, and there isn’t an awful lot Brand or Saida can do to change that.
Unpacking: Yes, this is mostly true. Quetz are... functionally immortal, I think, and their bodies don't really age or get infirm in this universe. But Brand's body will age, albeit slowly, and it will not be a pleasant experience for Saida to get decrepit.
But Roko isn't dead. His body is, yes, but he's still a yōkai and a kitsune. He has an intact sutābōru. I believe that given enough power, he'll be able to simply transform himself into a new flesh and blood body. He doesn't even need Brand and Saida for that - he just follows the sutābōru to the Eye Stone, draws from its power, and bam, new body. He is just too distraught to realize that quite yet.
Until the Reapers send him to the Other Place, he's as alive as Saida and Brand are. Just temporarily mode-locked in his balloon body.
