To be honest, I imagine have a long lover quarrel about who would wear the dress and who would wear the tux. They probably raise it as a challenge and the winner get to choose. Oddly, I am not sure if they fight to wear the tux or the dress. I oddly see Applejack with a closet feminine side. But maybe I see thing and hint that aren't really here in cartoon.
Rainbow Dash is actually sub. This is referenced several times where her bullshit "I'M SO BADASS!!!" demeanor vanishes entirely the moment important things happen.
